Surf and Turf

     I couldn't find Hokkaido Scallops which would've been the perfect compliment to the Hokkaido beef, but what are ya gonna do? I found some great day boat scallops in the U-7 range instead, which is the next best thing. These ingredients don't need much more than a little kosher salt and some clarified butter to cook the scallops in. The green beans were simply steamed and tossed and seasoned, then finished with some good extra virgin olive oil.
