Quick weeknight meal using the Vermicular to steam a brined chicken. It gets finished off in the oven on a rack. I’ve tried it in the actual Vermicular pot, but the sides don’t get any color, so a rack is highly recommended. The veg was braised in the Vermicular for 45 minutes prior to cooking the chicken.
